A tribute to the last Mamluk ruler of Cairo, Sultan Toman Bai, who was markedly loved by the people of Cairo. After him began the Ottoman Rulership of Cairo, which deported Cairo’s finest craftsmen and artisans to go on to build in the Ottoman Caliphate.

Brewing Sultan Toman Bai

Sultan Toman Bai is a strong, silky brew with deep chocolate notes and very balanced bitterness.
Our recommended recipe is:

8g:60g water, 5 min brew time. Stir very well (116 times at least). We also prefer a 9 min brew for its raisin chocolate aftertaste with a very silky body.
